Mirabelle Pancakes with Goat’s Cheese and Poppy Seeds

These thick little pancakes combine sweet and salty delights and are great for brunch. You could replace the mirabelles with apples.

I made these pancakes with cherries instead of mirabelles at the Foire Agricole in Ettelbruck in the Sou Schmaacht Letzebuerg tent. More info here.
