Who says waffles can only be sweet? For these waffles, I’ve combined seasonal mirabelles with goat’s cheese – a match made in heaven. I’m briefly cooking the mirabelles with a bit of sugar and vinegar to make a chutney. Since chutney goes super well with cheese, I’ve whipped some soft goat’s cheese with a bit of cream and pipe it on the waffle to go with the chutney. So lovely!
This recipe is part of a larger Tonicités project, for which I am visiting traditional fêtes in Arlon, Longwy, Thionville, Esch-sur-Alzette and Ville de Luxembourg and create waffles with local seasonal flavours. This mirabelle waffle was created to honour the annual fêtes de la mirabelle in Metz, which takes place at the end of August.
