Cauliflower Flammkuchen

This ‘tart’ is quite a revelation. The base is completely flourless, and made using cauliflower, ground almonds and egg instead. This concept is often referred to as ‘cauliflower crust pizza’ and has caused a real craze in the health blogosphere. Let me be frank though, the gluten-free base tastes nothing like a traditional pizza dough. Instead it provides this tart with a light and crumbly base, and a lovely nutty flavour. As to what goes on top: feel free to throw your favourite pizza toppings on the base; anything goes really! Oh, and if you have fussy kids, this recipe is a sneaky way to hide some healthy vegetables in one of their favourite dishes.
