Chilli Con Mettwurscht

I made a huge batch of this chilli with the scouts at the UDACA Scoutskiermes in Lorentzweiler and it went down a treat. For me, proper chilli con carne needs a smoky dimension, which is very hard to achieve if you don’t have access to chipotle chilies (a smoky, Mexican chilli variety). Do not despair though – by using a combination of smoked paprika powder and smoky Mettwurscht sausage from Luxembourg, I managed to really amp up the smokiness! Believe me, it is downright yummy Serve it topped with sour cream and coriander to add some freshness to the dish, and with the first bite you will be in chilli heaven!
