This lamb rack with feta crust and mint sauce reminds me very much of my time in England, plus it’s the perfect roast for an Easter feast. Everything is really easy to prepare in advance, and the lamb only needs a maximum of 20 minutes in the oven (15-17 minutes for a medium roast, 20-22 minutes for well-done).
Don’t be put off by the concept of mint sauce, it honestly tastes great! Think of it as a herby vinaigrette to go with the meat – it really does remind me of a zingy salad dressing, and is not weird at all. So do give it a try!
