Watermelon Feta Salad
800g watermelon
20g pine nuts
60g feta
a handful of mint leaves
olive oil
balsamic vinegar
salt and pepper
Serves 2 – Prep: 15’ – Vegetarian
Cut off the rind of the watermelon, remove the seeds and cut the watermelon into cubes. Put in a serving bowl.
Roast the pine nuts in a dry frying pan until golden. Add to the watermelon in the bowl.
Crumble the feta over the watermelon.
Finely chop the mint and scatter over the salad.
Drizzle some olive oil and balsamic vinegar over the salad, season with salt and pepper and toss to combine. Serve immediately.
TIPS:
• If you like it spicy, sprinkle some chili flakes over the salad.
• This salad is also great with coriander.
