Turkish Pizza Flatbreads

There’s nothing better than a freshly baked Turkish pizza, or Lahmacun. Topped with a spicy lamb mix, a generous handful of fresh herbs, a drizzle of lemon juice and a sprinkle of chilli flakes, it is one of the tastiest snacks Turkey has to offer. My Turkish pizza recipe is not quite the real thing, as I skip making the traditional, thin and crispy yeast dough, which needs to rest for a long time. Instead, I whip up an incredibly quick yoghurt dough, which I cook in a frying pan (yes!) before popping it under the grill for a few minutes, so the base and the topping cook at the same time. It might be unconventional, but it’s a lot of fun and the result is quite impressive.
