Giant marshmallow cookies
115g butter, at room temperature
100g brown sugar
50g white sugar
1 egg
1 tsp vanilla extract
240g flour
½ tsp salt
½ tsp baking powder
100g chocolate chips
8 marshmallows
Makes 8
In a bowl, mix the butter and sugars until smooth. Add the egg and vanilla extract and whisk again. In a separate bowl, mix the flour, salt and baking powder. Add to the eggs and mix with the chocolate chips until a loose dough comes together.
Break off 8 pieces of dough and flatten each, sticking a marshmallow in the middle and folding over the dough to seal. Place the cookies on a plate lined with baking paper and refrigerate for 30 minutes.
Preheat the oven to 180°C fan.
Take the cookies out of the fridge and place them on two baking trays lined with baking paper, spacing them apart.
Bake in the preheated oven for 16 minutes.
Let the cookies cool on the baking sheet for at least 5 minutes, then transfer onto a wire rack and leave to cool completely.
