1 large apple
125g butter
110g sugar
1 tbsp vanilla sugar
1 tsp vanilla essence
2 eggs
125g flour
1 tsp baking powder a pinch of salt
For the crumble:
30g butter
20g sugar
1⁄2 tsp cinnamon
40g oats
20g flour
Makes 8 muffins • Prep: 30 min • Oven: 35 min
Preheat the oven to 160°C fan.
Peel and core the apple and cut into 1 cm cubes.
In a large bowl, cream the butter, sugar, vanilla sugar and vanilla essence until pale. Add the eggs, one at a time, while continuing whisking.
In a separate bowl mix the flour with the baking powder and a pinch of salt. Add to the wet mixture and briefly mix into a smooth batter.
Fold through the apple pieces.
Line 8 holes of a muffin tin with cupcake wrappers and distribute the batter between them.
To make the crumble, put all the ingredients in a bowl and rub between your hands until they become crumbly.
Sprinkle the muffins with crumble and bake in the preheated oven for 35 minutes.
Put onto a wire rack and leave to cool before serving.
