We all know the juicing dilemma: you juice your favourite fruit and veg and are left with a heap of dry juiced pulp that ends up in the bin. When I was asked to develop a few ‘no waste’ recipes for a showcooking event, I thought of the juicer pulp. Wouldn’t it make sense to use it for something else? Fritters immediately popped into my mind. Simply mix the pulp with some egg, and add any herbs or spices to it for flavour. Fry in some oil and serve with a bit of garlicky yoghurt to dip in.
Just one word on the actual pulp: it’s pure fiber. Fiber is the stuff in fruit and veg that takes the most energy to digest. It also keeps you fuller for longer. Since these fritters are pure fiber, it is advised not to eat too many of them, as it might be a bit tough for your belly to digest so much fiber in one go.
This is great. I don’t like to waste and I feel I can do better with more fiber in my diet. Definitely trying this recipe.
