In this Zero Waste video I’m showing you what to do with the pulp that’s left after juicing. Simply mix the pulp with some egg, and add any herbs or spices to it for flavour. Fry in some oil and serve with a bit of garlicky yoghurt to dip in.
Just one word on the actual pulp: it’s pure fiber. Fiber is the stuff in fruit and veg that takes the most energy to digest. It also keeps you fuller for longer. Since these fritters are pure fiber, it is advised not to eat too many of them, as it might be a bit tough for your belly to digest so much fiber in one go.
