300g Judd or Kassler

4 slices Baurenham (cooked Luxembourgish ham)
16 slices of mild cheese (Edam or Emmental)
8 slices crustless sandwich bread
4 eggs
For the sauce:
2 tbsp Luxembourgish mustard
2 tsp wholegrain mustard
150ml white wine
400ml chicken stock
4 tsp cornstarch
150ml cream
Fries, to serve (optional)
Makes 4
The day before you want to eat, prepare the Judd or Kassler. Put the meat into a saucepan with cold water and bring to the boil. Once boiling, drain the meat. Put back in the pan, cover with water and bring back to the boil, then reduce the heat and simmer for 2 ½ hours. Take off the heat and leave the meat in the water until the next day.
The next day, cut the cold Judd into 8 slices and set aside.
Fry the sausages in a pan with a bit of oil until browned all over. Set aside to cool for 10 minutes, then cut in half and slice open lengthwise.
Lay out 4 slices of sandwich bread. Top each with a slice of ham, then plaice the sausage slices on top, cut side facing upwards.
Put a frying pan over a medium heat and fry each sandwich slice, with the sausages facing downwards, for a few minutes until the cut side of the sausages is browned.
Remove from the pan and place a slice of cheese over the sausages, then arrange 2 slices of Judd on top and finish with a second slice of sandwich bread. Set aside.
Make the sauce: Put the mustard and white wine in a saucepan (or use the same frying pan used fort he sausages, keeping the meat juices in it for the sauce), bring to the boil and cook for a couple of minutes. Add the stock and cook for a couple of minutes. Dilute the cornstarch in the cream and add to the sauce, bring to the boil to thicken. Adjust the seasoning with salt and pepper if needed and set aside until serving.
When ready to serve, preheat the oven to 180°C fan. Heat a sandwich maker and toast each sandwich until browned.
Place the sandwiches on a baking tray, then top each with 3 slices of cheese. Put in the oven for 5-10 minutes until the cheese is melted and the inside warm.
Meanwhile, fry 4 eggs in a bit of oil in a frying pan.
Put the sandwiches onto plates, top with a lade of sauce, then with a fried egg, and with some more sauce. Serve with chips (if you can handle it!)
