A festive no-bake xmas cheesecake!
Over the years I’ve made many festive Xmas cakes, but for this year I’ve decided to ditch the baking and make a cheesecake that requires no oven – a few hours in the fridge will do! Perfect for busy Christmas days, when your oven is already doing overtime…
The flavours are also very festive: I’ve used speculoos biscuits for the base. These are caramel gingerbread cookies from the Netherland and Belgium, and are often given as a treat with your cup of coffee in Luxembourg cafés. I’ve added a touch more cinnamon to the crumbs, to make it really festive. The cheesecake topping is sweetened with melted white chocolate, which also gives it its creamy indulgence. Then, the whole thing is topped with cherries – jarred ones of course, as you wouldn’t come across fresh ones this season.
