Waffle Duo

I am fairly sure all Luxembourgers love waffles – they are served at every village fête and they are definitely one of the highlights at the annual fun fair in the capital, the Schueberfouer. A classic ‘Eisekuch’ is dusted with icing sugar or topped with whipped cream and strawberry slices. When it comes to the batter though, there are many variations: some people use sparkling water, others swear by lemonade or even beer to create the perfect light, aerated waffle. I just whip my egg whites until stiff and fold them into the batter – it makes for a slightly chewier waffle that is light at the same time .

I have taken some liberty with the savoury topping here – pesto whipped cream and roast tomatoes is definitely an odd one, but the combination has wowed anyone who has ever tried it! Either way, my batter works for both sweet and savoury toppings!
