Halloumi Burger with Pomegranate Guacamole

In the second episode of Mastercook, the challenge was to make an original burger creation. One candidate made an excellent veggie burger, which got me thinking: why do all my burgers always involve meat?!

This is a really quick and easy veggie ‘burger’. I love halloumi, as it’s such a versatile veggie ingredient. You can fry this Cypriot cheese without it melting, so it’s perfect for throwing on the barbeque. In this burger, I’m combining this salty cheese with a pomegranate-specked guacamole, which adds some zing to the whole thing.

TIP: For amazing fingerfood bites, fry off small pieces of halloumi and top them with a dollop of pomegranate guacamole.
