Coconut Victoria Sponge Cake

If I’d have to name one iconic British cake, it would have to be a Victoria sponge. This cake was named after Queen Victoria, who favoured a slice of sponge cake with her afternoon tea. Typically, a Victoria sponge cake is made with whipped cream and raspberry jam, sandwiched between two cake disks. I’ve added a hint of coconut to my Victoria Sponge cake, and decorated it with fresh raspberries. An amazing summer treat.

I made this recipe in the picnic episode of my show, you can watch it here.

Recipe available exclusively in my first book Anne’s Kitchen. Buy the UK version here and the German version here.
