This recipe was given to me by Edouard Speck, who I met on a trip to India. I was filming with him for a week in his quaint hotel Presa di Goa, and each evening I’d have this chocolate mousse as dessert. I loved it so much that Edouard let me have this recipe for my book. Incidentally, the recipe comes from his friend Anne, so the recipe remains in ‘Anne hands’.
