Cheese and Salami Muffins

Savoury muffins are the perfect picnic treats, and what’s most amazing is that you can throw anything you have lingering in the fridge into them. For this recipe I’ve used Luxembourgish mature Berdorf cheese, a lovely hard cheese that comes close to an Emmenthal cheese. I’ve also added sheep’s salami from a Luxembourgish producer from Medernach.

Feel free to experiment with other flavour combinations. Here are some other savoury muffins suggestions – just use the basic batter from this recipe:
– olives, sundried tomatoes, feta and basil
– dried figs, manchego, serrano ham
– peas, mint, feta
– walnuts, feta, rosemary
– smoked salmon, capers, dill
