I’ve been making focaccia for years and most often topping them with rosemary or olives. Classic stuff. Then this year, a trend emerged on instagram of people decorating their focaccias like little paintings. Most often they feature flowers and meadows – hence the name garden focaccia. For this focaccia I headed down to my little garden and picked some rosemary sprigs (which were just blooming), some chives with chive flowers and some bay leaves from my bay bush. I’ve also used peppers to create a flower, and played with olives and cherry tomatoes that were still in the fridge. Just let your imagination go wild!
This recipe was created as part of my “Recipes for Staying Home” show, to flatten the curve during the 2020 Covid-19 outbreak. The concept is to inspire people to cook comfort dishes with ingredients they have at home – I show basic recipes that can be adapted with all kinds of other ingredients.
