Summer Aperitivo: Courgette goat’s cheese rolls

It’s been a hell of a looooooong time since I last shared a recipe on here! You could be forgiven for thinking that I’ve become lazy and only eat out these days.. Alas, no! All the marvellous recipes I’ve been working on in the past 6 months are going to land in my upcoming cookbook. It’s a tough process, since every time I make a dish take a photo of it, the first thing I want to do is scream and shout about it and share it with the world. Not so when you’re making a cookbook, oh no. These little pleasures have to be delayed for a big bang in the end. A humbling experience for an impatient brat like me.

Anyway, I came up with this little aperitivo treat tonight on the way back from work, and I got all excited. “This one’s not for the book, this one’s for the blog. For NOW!” So I threw myself into making these beautiful yummy little parcels, and had them finished in an instant. But, as soon as they were laid out in front of me this little voice appeared in the back of my head.. “It could be for the book after all.. Come on, it would be a nice little addition for the Party Food chapter… Come on… It would be one more step towards the completion of your 100 recipes for the book…” Scary that voice I tell you, it reminded me of Gollum in Lord of The Rings.

Needless to say that I dismissed the little voice, gave it a little good-bye wave and decided to publish it on the blog after all. Et voilà. I hope you enjoy it. Super quick and easy to make, and delicious as a summery aperitivo with a glass of wine.
