I love cooking with regional and seasonal ingredients, so when Urlaub Saarland asked me to join them in discovering Saarland products and cook with these, I was immediately game! In our ‘Dibbe Duo’ project, I’m visting Saarland over three months – each month I’m being introduced to two local producers to gather ingredients that I’ll bring to a local chef. Together we then proceed to develop a new recipe.
This Augusts’ Dibbe Duo took me to Forellengut Rosengarten, a local fish farm that rears trout and other fish and also smokes it. I also visited Genussbrennerei Monter, where they make innovative gin with local wildflowers. Since it’s the season for Mirabelles, we also picked some of those for our dish. I then sat down with Christian Münch-Buchna from Buchnas Landhotel Saarschleife, to see what he would make with these ingredients. And out came this gin-poached fish with mirabelle chutney and sorrel salad.
