Spiced nut and fruit mix

Pimp your leftover nuts and turn them into a delicious snack!

I often have all sorts of nuts lying around my cupboards – half-empty packets of walnuts, pecans and almonds (the unfinished victims from some recipe testing) and leftover dried fruit from baking… My cupboards are full of nuts.

Problem is: nuts go off at some point. So, I’ve started turning them into a delicious snack, to save them from their cupboard limbo! They get coated in a salty caramel, spiced with fennel seeds and curry powder. Absolutely delicous and so addictive – they never last long!!!

Ingredients

200g mixed unsalted nuts, dried fruit and seeds
2 tbsp dark brown sugar
2 tbsp water
1 tbsp olive oil
2 tsp curry powder
1 tsp fennel seeds
2 tsp salt flakes
a pinch of chili powder
a grind of pepper

Method

Makes 1 jar

Preheat the oven to 160°C fan.

Put the brown sugar, water, olive oil, curry powder, fennel seeds, salt and chili in a frying pan and bring to the boil.

Add the nuts, fruits and seeds and some pepper and cook for 3 minutes, stirring constantly, so that the nuts are coated in the caramel.

Spread out the nuts on a baking tray lined with baking paper and bake in the preheated oven for 12 minutes, stirring them halfway through.

Leave to cool completely on the baking tray before putting in a jar.
