Energy Balls

Got any unwanted leftover Xmas cookies? Well, you can now turn them into these delicious energy balls! They’re made in no time and make for the perfect back-to-school snack!

Ingredients

50g mixed nuts (f.ex. walnuts, almonds, pistachios, pumpkin seeds)
50g leftover Xmas cookies (f.ex. spekulatius, gingerbread)
50g dates
40g dried prunes
40g raisins
20g candied orange peel
¼ tsp cinnamon
1 tbsp honey
dessicated coconut, for rolling

Method

Makes 20

Put the nuts and cookies into a food processor and pulse until roughly chopped but not powdery. Put into a bowl and set aside.

Roughly chop the dates and prunes and put in the food processor with the raisins, candied orange peel and honey. Pulse to a rough paste.

Add the nuts to the fruit paste with the honey, then pulse again so that it’s all combined.

Wetten your hands and roll the fruit mixture into cherry-sized balls, then roll in dessicated coconut.

These will keep for up to 2 weeks in a tupperware in the fridge.
