Beetroot and Goat’s Cheese Crackers

Looking for a simple and easy appetizer for the festive period? Well these beetroot and goat’s cheese crackers are so quick to assemble, and they are super lovely! A little fresh touch is added with lemon zest in the beet mix, this really elevates this cracker to a very special something. Perfect paired with a shot of my earthy beetroot Drëpp from Distillerie Adam.

Ingredients

1 big beetroot, cooked
zest of ½ lemon
100g soft goat’s cheese
20 crackers
dill-fronts
Anne’s Bagel Spice (optional)
salt and pepper

Method

Makes approx. 20

Cut the beetroot into chunks and put into a mini food processor with the lemon zest and some salt and pepper. Whizz into a coarse paté.

Spread the goat’s cheese over 20 crackers and top each with a bit of beetroot paté.

Top each with a dill fronts, grind some black pepper over the crackers and sprinkle with Bagel Spice, if using.

Serve immediately.
