Fresh pea salad with burrata

This salad is one of my go-to summer salads, it’s just so fresh and creamy and makes the best of summer flavours. Fresh peas are combined with pea shoots, ruccola and toasted pistachios, and given the creamy treatment by some smoked burrata. So quick and easy to assemble and just incredibly yum!

Ingredients

300g fresh peas
Two handful of pea shoots (approx. 40g)
A handful of ruccola (approx. 30g)
10 mint leaves, chopped
1 tbsp chives, chopped
Olive oil
Lemon juice
1 smoked burrata ball
2 tbsp pistachios, toasted

Method

Serves 4 as a side

Wash the peas and season with salt and some olive oil.

Season the pea shots and ruccola with salt, toss through the chopped hearbs and drizzle with a bit of olive oil and lemon juice.

Put the peas on a large serving plate. Top with nests of the leaves.

Break the burrata ball and tuck pieces into the salad.

Sprinkle with toasted pistachios.

Serve immediately.
