Grilled Peach Toast

Summer on a slice of bread! Grilled peaches, smoky burrata, fresh basil… on a slice of grilled sourdough. It doesn’t get any better than this!

Ingredients

1 peach
1 slice sourdough bread
½ smoked burrata or Stracciatella
Basil leaves
Olive oil
1 small garlic clove
Salt and pepper

Method

Serves 1

Cut open the peach, remove the stone and cut into slices. Mix with a drizzle of olive oil and a pinch of salt.

Brush the bread with olive oil on both sides.

Heat a BBQ and grill the peaches and bread on both sides until nicely charred.

Cut open the garlic clove lengthwise and brush one side of the grilled bread with the cut-open side of the garlic, to lightly infuse it.

Top with burrata and peaches, then season with salt and pepper. Decorate with some basil leaves and serve immediately.
