Xmas Sandwich

Not sure what to do with your Xmas leftovers? Well, do it like the Brits, and make a Boxing Day Sandwich! In the UK, people do indeed often make a sandwich with all the yummy leftovers on the 26th December. You usually find turkey in there, gravy (sometimes mixed with mayo), bacon, Brussels Sprouts, and even pigs in blankets (bacon-wrapped sausages). It’s definitely a decadent way to finish the Xmas days, but hey, it’s really fun!

For my sandwich I am making a “poulet curry” filling – shredded turkey with curried mayonnaise, and combining it with all the trimmings and also some crisps for crunch. Let the decadence begin!

Ingredients

For the turkey filling:
150g leftover turkey
60g mayonnaise
60g Greek yoghurt
1 ½ tsp curry powder
20g coriander, chopped
a squeeze of lime juice
salt

4 smoked bacon strips
6 slices sandwich bread
2 slices raclette cheese
4 tbsp airelles
a handful of salad leaves
1 bit of coriander
60g leftover Brussels sprouts, chopped
a handful of leftover crisps (salt or paprika)

Method

Makes 2 big sandwiches

Chop the leftover turkey to small pieces. In a bowl, mix the turkey, mayonnaise, Greek yoghurt, curry powder and coriander and season with lime and salt.

Cut each bacon slice into 2. Fry the bacon in a pan until nicely browned. Drain on a piece of kitchen paper and set aside.

Toast the sandwich bread slices. Melt a slice of raclette cheese in a frying pan and place one sandwich slice on top of it, so it sticks. Remove from the pan and set aside. Repeat with the second slice of cheese and another slice of bread.

Spread 1 tablespoon of airelles onto a toasted sandwich slice (without cheese). Top with a tablespoon of the turkey and a bit of the chopped Brussels sprouts. Then place 2 bacon pieces on top. Arrange a bit of salad and a bit more coriander on top, then put a few crisps on top. Spread another tablespoon of airelles onto a second toasted sandwich slice (without cheese). Top again with a tablespoon of the turkey, a bit of Brussels sprouts 2 bacon pieces, salad, coriander on top, then put a few crisps on top. Spread a bit of turkey on the back of the sandwich slice with the cheese, then stick it on top of the sandwich.

Press the sandwich together, stick two toothpicks through each side, cut diagonally in half and serve. Repeat to make a second sandwich.

Serve with a bit of salad.
