Xmas Granola

Start the day with this wonderful granola, which tastes like a Xmas cookie! I’m using spekulatius spice and marzipan in this granola, and combining the oats and nuts with raisins and dried apples. A perfect winter granola to have in your pantry!

Ingredients

40g honey
50g coconut oil
1 ½ tsp Anne’s Sweet Spice or spekulatius spice
150g oats
50g mixed nuts (almonds, pecans, hazelnuts)
20g almond flakes
20g cassonnade
75g marzipan (FROZEN)
1 tsp vanilla extract
2 tsp amaretto
a good pinch of salt

60g raisins
30g dried apples, chopped

Method

Makes 1 jar

Preheat the oven to 150C fan.

In a little saucepan, melt the honey and coconut oil, then stir through the spekulatius spice.

Put the oats into a large bowl. Roughly chop the nuts and add to the bowl with the almond flakes and cassonnade.

Grate the frozen marzipan into the bowl, stir to combine. Add the melted honey, vanilla extract and amaretto with a good pinch of salt and stir to combine.

Spread the mixture evenly on a baking tray lined with baking paper and bake for 25 minutes, stirring halfway through.

Take the granola out of the oven and leave to cool.

Once cool, fold through the raisins and dried apples, then transfer into a jar.

This granola will keep for at least a month.
