Waffles

In these crazy times it’s important to treat yourself to something special at the weekend. I love making waffles! These waffles also freeze really well, and you can reheat them in the toaster so that they become crispy before serving.

This is a recipe from my cookbook ‘Flavours of Home’.

Ingredients

200g flour
1 tsp baking powder
¾ tsp salt
50g sugar
1 tbsp vanilla sugar
1 tsp vanilla extract
2 eggs
100g butter, melted
300ml full-fat milk

Method

Makes 10 waffles

Mix the flour, baking powder and salt in a bowl.

In another bowl, mix the sugars, vanilla essence, eggs, melted butter and milk, and gradually beat into the dry ingredients until you have a smooth batter.

Heat the waffle iron, add a bit of butter to the iron and distribute batter. Close the waffle iron and bake for approximately 3mins until done.

Serving suggestions:
• Serve with crispy bacon and maple syrup
• Serve with strawberries
• Serve with blueberry jam and yoghurt

Alternative ways to use the batter:
• You can make pancakes with this batter. Simply melt a knob of butter in a pan and drop spoonfuls of batter in the pan to create pancakes. Cook until bubbles appear on the surface, then turn over and cook for another minute.
