Easter is drawing near and there’s almost certainly going to be some uneaten chocolate left over. The perfect excuse to make my ‘leftover chocolate cookies’ – just chop up any leftover chocolate bars and mix them with the dough. I love to make these cookies really big – bigger than my hand. They will spread quite conisderably in the oven, so make sure to space out the doughballs quite well on the baking tray.
