#CleverKachen: Bouneschlupp – 1 pot, 3 meals

What if one pot of Bouneschlupp could become three completely different meals?

For this #CleverKachen challenge, I’m starting with a big pot of one of Luxembourg’s most-loved dishes: Bouneschlupp. But instead of eating the same leftovers for the next few days, I’m transforming them into two completely new dishes.

The first day, we enjoy the Bouneschlupp just as it is. Then the leftovers become a creamy Bouneschlupp pasta with crispy Mettwurscht, followed by a smooth curried soup topped with homemade garlic croutons.

Three meals from one pot – with a few clever ways to use up other ingredients hiding in the fridge along the way.

 

DAY 1: BOUNESCHLUPP

It all starts with a big pot of classic Bouneschlupp, made with green beans, potatoes, summer savoury and Mettwurscht.

The recipe makes six portions: enjoy two straight away, then keep the remaining soup in the fridge ready for the next two meals.

DAY 2: BOUNESCHLUPP-PASTA

The first leftovers are transformed into a creamy one-pot pasta.

The Bouneschlupp becomes the base of the sauce, with macaroni cooked directly in the soup, then finished with cream, cheese, mini mozzarella and crispy Mettwurscht.

DAY 3: CURRIED BOUNESCHLUPP WITH GARLIC CROUTONS

For the final meal, the remaining Bouneschlupp gets another completely different makeover.

Curry powder and herbs transform the soup before it’s blended until smooth and finished with cream. Crispy homemade garlic croutons made from stale bread go on top.
