As any good Luxembourger, I have a fond place in my heart for Gromperekichelcher – crisp potato cakes, which I often like to dunk into apple sauce.
For my 2015 Xmas menu in Télécran, I decided to add a bit of glamour to the humble Gromperekichelchen, and pimp it with smoked salmon and a horseradish creme fraiche – all served on a bed of sweet beetroot. It’s a really simple dish, yet an impressive start to any Xmas menu. Enjoy!
