Smoky Spinach and Artichoke Lasagna
Baked pasta dishes are just super comforting, aren’t they? I love a good lasagna on a rainy day, topped with loads of cheese and bubbling when coming out of the oven.
This vegetarian lasagna is absolutely amazing, as it’s loaded with smoked cheese. I’m using scamorza cheese, which you can easily find at Luxembourgish supermarkets. If you prefer it a bit less smoky, you can mix it with mozzarella or cheddar.
The recipe is inspired by artichoke dip, which my American friend Amanda made for last year’s Thanksgiving. It’s basically canned artichokes and spinach, mixed with sour cream, mayonnaise and lots of cheese. I love it (and I shall post the recipe here one day!), yes, I love it so much I turned it into a lasagna.
